Herbs provide us with pleasure for all of our senses from rubbing the leaves to release their aromas to smelling and tasting them. Herbs delight us through sensory experience providing us with lovely fragrances and gustatory pleasures.
In this two-day class, we will use fresh and dried herbs to learn about smell, taste and the six flavors: sour, sweet, salt, bitter, pungent and umami. We will explore these flavors singly and prepare a dish featuring each flavor. During this hands-on class, we will create a few flavorful herbal blends to taste and take home: Gomasio with sesame, seaweed and sea salt; Umami Medicinal Mushroom Powder a blend of dried mushrooms, herbs and spices; and Chimichurri Sauce using fresh green herbs, garlic, chiles, vinegar and oil.
This class will expand your herbal horizons—and change your way of thinking about cooking—you will never smell, taste or cook quite the same! Bring an apron, your favorite chef and paring knives, a go-mug or glass jar for drinking from and a small box or basket to carry a few items home. Recipe handouts will be provided. Registration deadline two weeks before class date.
Admission: $40 Registration Fee due to the Ozark Folk Center when you call 870-269-3851 #1 to register: Class fee is $200 for the class plus $50 materials fee payable to instructor on day of class, cash or check. Total cost of this class $290.
